I do not eat a lot of processed sugar but I do still have a sweet tooth every now and again. Most of the time, fresh fruit satisfies that sweet tooth but not always. I have a major weakness for sorbet but hate what store-bought sorbet costs.
This recipe originated from The Primal Home, a great primal eating and budget-friendly blog. The benefits of this recipe include: no added sugar, no preservatives, much cheaper than buying store-bought sorbet, and you have to make it when you want to eat it. . . no just going to the refrigerator and mindlessly eating a pint of sorbet. (Been there, done that)
Makes 2-4 Servings
- Handful Frozen Strawberries (I have used frozen raspberries, mixed berries and blueberries too)
- Frozen Banana, sliced (I usually cut up bananas and freeze them when turning brown)
- 1-2 TBSP coconut milk
- 1 teaspoon vanilla
Place the frozen bananas and strawberries into a food processor. Start blending then add in the vanilla and coconut milk. Just enough for it to blend together but not too much, we want it to be really thick! Once it is nice and smooth but still very thick scoop it out and enjoy! It needs to be eaten right away as it will not keep very well in the freezer. Makes 2-4 servings.
**This is difficult to make in a blender, but possible. I would highly suggest a food processor.
